This coffee is processed using a unique method Finca San Jeronimo calls "Slow Jam" – a variation of the honey process in which the fermentation is started, then interrupted by de-pulping and drying on patios. This process gives it a unique flavor profile not typically seen with honey processed coffee!

About
Edgar Cosigua is famous around Deeper Roots as the mill manager at Finca San Jeronimo Miramar and has played a prominent role in delivering all of the wonderful coffees you've tasted from there. He has also been growing coffee on his own small plots in the region. Over the years, as his production and skills have grown, the resulting cup quality has become remarkable.We are honored to share yet another specific lot from Edgar.
