San Jose | Colombia
This coffee uses a washed process that builds serious complexity. Cherries are picked, rested overnight, then combined from three consecutive days of harvest into a single tank fermentation.
That strategy creates layered acidity and depth you can taste as bright citrus, complex tamarind, and toffee sweetness.

BEHIND THE CUP
About
This coffee represents what happens when you fix what's broken. A local organization wasn't serving these farmers well. Our partners at Pergamino audited the problems and rebuilt the supply chain with the Pillimue family to ensure direct partnership and transparent payment. We've been working with them since 2019 because relationships like this are what we strive for.
