About
El Jardin, formerly La Palma, is one of our longest-standing producer relationships. Until 2024, it was part of Santa Barbara Estate. Leo Henao, Pedro's longtime business partner, now owns the farm and has continued its tradition of quality and experimentation.
El Jardin means "The Garden." Leo and his wife named it after Epicurus's school—a place for learning, contemplation, and personal development. That's what the farm embodies: a place to slow down, observe, and explore how small ideas grow into something meaningful.
The farm uses a water-fermented washed process designed to build complexity. Cherries rest overnight, get depulped the next morning, then ferment in water before drying on raised beds. The slow finish in a silo dryer at 100°F brings everything into focus. Leo and his wife continue to experiment across the farm, testing methods that are accessible and replicable for small-scale producers throughout Colombia through Pergamino's Allied Producer Program.
