This lot of Gatta Ethiopia is fermented in in anaerobic conditions to allow for a particular flavor to naturally occur. It was then dried like other natural processed coffees with the fruit still intact on raised beds. It is bright, fruity and ever so slightly boozy with ripe strawberry, grape and floral notes in the cup.

About
This special lot is harvested from the Gatta farm where our Shantawene coffee is collected and dried. The anaerobic fermentation is a twist on the traditional natural process used on the Shantawene. It was first held in cherry form in anaerobic conditions to allow for a particular fermentation to occur. It was then dried like other natural processed coffees with the fruit still intact on raised beds.
